How Bohnanza scores
Bohnanza is scored in gold coins, and coins only ever come from harvesting a bean field. Every bean card carries a beanometer showing how many of that bean you need for 1, 2, 3 or 4 coins; when you harvest, you flip that many cards face down onto your coin pile and discard the rest. The game ends when the draw deck runs out for the third time, everyone harvests every field, and the most coins wins.
The beanometer is the whole scoring system
Each bean type prints its own thresholds: so many cards for 1 coin, more for 2, and so on. When you harvest a field you count the cards, take the best coin value you qualify for, turn that many cards face down onto your coin pile, and discard everything left over face up. The cards you convert are the coins, so a three-coin harvest permanently removes three of that bean from the game.
Rarer beans pay faster
The deck is split very unevenly: 24 coffee, 22 wax, 20 blue, 18 chili, 16 stink, 14 green, 12 soy, 10 black-eyed, 8 red, 6 garden and 4 cocoa. The scarcer the bean, the fewer cards you need for the same coin, which is why a tiny cocoa field can be worth as much as a sprawling coffee one. Some player counts drop the rarest beans during setup, so check your edition's setup table before you build a plan around cocoa.
The one-card field trap
You may not harvest a field holding a single bean card while another of your fields holds more than one. New players plant something they never wanted, then discover they cannot clear it to make room for a bean they do want. This is the rule that makes planting order matter more than almost anything else, since the first card in your hand has to be planted whether it suits you or not.
The game ends without much warning
The deck is reshuffled from the discard pile twice; the third time it runs out, the game is over on the spot. Everything still growing in your fields is then harvested at the normal beanometer rate, so a field sitting one card short of its next threshold is pure waste, and a field below its first threshold pays nothing at all. Cards left in your hand at the end score nothing.
Paying for the third bean field
Two fields is a real constraint, and the standard rules let you buy a third at any time - even off-turn - for three coins taken off your pile and discarded. Those three coins are gone from your final total, so the extra field has to earn them back before it earns you anything. Printings vary here: some hand out a player mat with a field count fixed by player count, and some adjust the price at higher counts, so confirm what your box says.
